Iowa State's Adam Schonert has been named the “waffle master” for his original waffle creations. The Food Network considers his waffles to be the best in Iowa and one of the ten best in the United States.
Whisk, beat, bake and serve are now a part of Schonert’s daily routine. Schonert is a freshman studying Food Science and has made a career out of waffle-making. It all started when Erika Jensen, owner of a local bakery called The Chocolate Season, asked Schonert to create an entire menu of original waffles for her shop.
The two have built a great rapport thanks to Schonert’s frequent visits to the shop and The Chocolate Season now holds a very special place in his heart.
Jensen and Schonert worked on perfecting the waffles at the shop every Saturday for brunch and finally launched the waffle menu in January 2017. Even though the customer attendance was low on the day of the launch, things quickly sped up due to word of mouth. Now, at least 50 people show up for a waffle brunch every Saturday.
Schonert has extended his horizons beyond his position at The Chocolate Season and created The Patisserie where he takes orders for pies and cheesecakes and hand delivers them during the holidays.
He likes to give his services a personal touch and therefore writes letters instead of emails.
Schonert’s business has grown by leaps and bounds. He also traded his award-winning bakery for a residence hall to further develop his scientific and culinary skills.
Recently, he's focused on product development as a short term goal and opened a shop similar to The Chocolate Season as part of his long term plan. In addition to studying Food Science, he's also joined a product development club where he's learning the skills needed to run a successful business.
The club competing in the National Dairy Council New Product Competition’s top six for three-component workout snacks composed of 51% dairy. While the “waffle master” loves being in charge of and managing the business and creative side of Schonert’s Patisserie, he loves the social atmosphere of The Chocolate Season just as much. It is his early childhood memories of making waffles with his dad and his undying love for baking which has gotten Schonert to where he is today.
